Single Layer Nachos


Happy new year! I hope 2021 is a great year and better than last. 2020 has definitely been a crazy year. One thing great that came out of it is that my husband and I bought a new house. We used our brand new kitchen and newer oven to make these ridiculously easy single layer nachos!

Spam Musubi



I can't believe I don't have spam musubi in here. I made them quite often before medical school. I even made a spam musubi kit for my bestie for her birthday one year. Due to the pandemic, we have lots of can food - one being SPAM!

Banana Bread



For Christmas this year, I asked for a KitchenAid! And I got one! Yay! We are starting to bake more. I generally bake cookies but decided to try bread as its a little less fatty. Here is a simple banana bread recipe. Enjoy and Merry Christmas!

Shanghai Style Sliced Bean Curd


When I lived in Sacramento, we went to this Shanghai restaurant that served this sliced bean curd appetizer. I fell in love with it and actually went there a couple times basically to have this dish. We wanted to make it at home especially since we don't live in Sacramento any more. Unfortunately, it was difficult to capture the noodles in a better light.

Garlic Parmesan Roasted Shrimp


It has been a bit since I have posted. Since my last post, I have moved down from Sacramento to the Bay Area to start my new job soon. Now, every other night I am in charge of dinner. I don't really cook a lot of meat but my husband wants some kind of protein tonight for dinner. I love shrimp so I made this. I wanted to make something light and simple. This is similar to another dish (baked garlic shrimp) I really like but this is a bit less greasy.

My friend ordered a chickpea appetizer at dinner one night. It was soo delicious! I love healthy but tasty snacks! Chickpeas are an excellent source of fiber!

Caprese Salad

Hello! I am back! I just finished up my third year of medical school with two months of the time consuming surgery rotation. I am currently studying for my boards. I went to the grocery store a couple weeks ago and they had mozzarella cheese on sale. Yay! This caprese salad is perfect for a hot summer day. It is a light snack and also so yummy.

Red Lobster Cheddar Bay Biscuits

I have never been to Red Lobster but everyone raves about the the biscuits. Now you can buy the biscuit mix! It is so good! My boyfriend says it tastes just like the Red Lobster biscuits! You can buy the mix on Amazon, Sam's Club, or Walmart but please don't go to Walmart. Walmart treats their employees like crap.

Soy Sauce Eggs (Shoyu Tamago)

Hello! Welcome to 2014! I had a crazy last couple of months with being on my Internal Medicine rotation. I was so busy that I ended up buying paper plates and plastic forks so I didn't have to do dishes. Anyway, I have some weekends on my new rotation so hopefully I will be adding more entries.

I realized I mainly make American food so I am going to explore my Asian heritage by learning some Asian recipes. This one is pretty simple and tasty.

Baked Garlic Shrimp

A healthier and easier version of a previous recipe I tried, Garlicky Baked Shrimp. This time I tweeked the recipe to my liking instead of following the recipe to a tee. I made it healthier easier without cutting out the delicious factor.

Baked Cheddar Tomatoes

Improvised cooking at its best. I bought tomatoes for my Italian pasta salad and shredded cheddar cheese for the Cheesy Garlic Biscuits. I have tons of recipes saved that I want to try and one of them is similar to this but with Parmesan cheese.

Parmesan Roasted Potatoes

A modification of a previous dish I made: Parmesan Roasted Potato Wedges This is a little softer but with a bit of a crisp whereas the wedges were more like fries. I feel this is a bit healthier too.
