Single Layer Nachos


Happy new year! I hope 2021 is a great year and better than last. 2020 has definitely been a crazy year. One thing great that came out of it is that my husband and I bought a new house. We used our brand new kitchen and newer oven to make these ridiculously easy single layer nachos!

Serves:  4-6
Total Time: 20 minutes
 

Ingredients 
1lb ground turkey
1 packet Taco meat mix
1 can black beans
1 Bag of salted tortilla chips
1 Avocado
3 tbsp cilantro - finely chopped
4 tbsp red onion - diced
2 tomatoes - diced
1/2 teaspoon salt
1/2 lime
1 bag of shredded cheddar cheese
1 tbsp oil
Pepper to taste


Directions:

- Preheat oven 400F
- Saute ground turkey and black beans for 5 minutes then mix in taco meat mix, set aside
- Using fork mix and mash avocado with salt, cilantro, and lime juice
- Mix together the tomato and red onion with a pinch of salt and pepper
- Spread tortilla in a single layer on baking pan
- Spread ground turkey and black beans on top of tortilla chips
- Spread tomato/onion on top of tortilla chips
- Generous sprinkle cheddar cheese over
- Bake for 10-12 minutes
- Place dollop of guac throughout
- Enjoy with salsa of choice 


Tips & Thoughts
- Your choice of ground meat - we chose turkey as its a healthier option
- Can use sour cream
