Oatmeal Raisin Cookies

Whenever Willie come visit me I make him a batch of cookies to take home as a souvenir.
Makes: 36 cookies

Prep Time: 15 minutes

Baking Time: 11 minutes

Ingredients:
Dry
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon kosher salt
Wet
1 cup unsalted butter, softened
1 cup sugar
1 cup dark brown sugar, firmly packed
2 large eggs
2 teaspoons vanilla

3 cups oats (not instant)
1 1/2 cups raisins

Directions:

Preheat oven to 350F
Whisk together dry ingredients and set aside
In a big bowl, cream together the wet ingredients using a hand mixer
Using the hand mixer slowly mix in the dry ingredients until no flour is visible
Add in the oats and raisins 
Roll the dough into balls about 1 inch in diameter 
Place on a baking sheet sprayed with nonstick spray 2 inches apart
Bake for 11-13 minutes or until golden 
Remove from oven, and let cool on the baking sheet for 2 minutes before transferring to a cooling rack. 

Note
1. We added a bit more vanilla and it was amazing.
2. Mixing in the oats required a lot of arm strength so don't be discouraged.
