Fried Rice with Dried Scallops and Broccoli Stems

Also known as the healthy man fried rice. Well I refer to it as that. My uncle who has high cholesterol orders this whenever we go out to dinner.




Serves 3

Ingredients:
- 3 cups of day old rice
- 8 pieces of dried scallops or 1/2 cups of shredded dry scallops
- 4 stalks of broccoli stems or 3 kailan stems
- 6 egg whites
- 6 cloves of garlic, minced
- 3 stalks of green onions
- 1 teaspoons of salt

1) soak dried scallops over night

They will eventually look like this.

Shred them and keep in a dish.
You can also purchase the shredded form at some Asian supermarkets.

2) Chop up the stems and blanch for 5 minutes. Keep in a bowl.

3) Oil a wok/pan and scramble egg whites. Dish up.

4) Using the same wok/pan if big enough on medium high heat, add oil.

5) Toss in garlic and shredded dried scallops.

6) Add rice making sure the oil coats all the rice.

7) Add egg whites, stems, and green onions.

8) Season with salt. I used garlic salt but regular salt works too. Taste and adjust.
