Chinese Steam Egg

Very easy dish. Delicious. One of my favorite dishes to eat at home.




Serves 2-3

Ingredients:
- 2 eggs
- 1/3 green onion, chopped
- 1 tablespoon oil
- 1/4 cold/cool water
- salt and pepper to taste

In a deep metal dish (ceramic works too), crack the eggs. The metal pan allows the eggs to be cooked faster. Add the cold/cool water. It is important to not add warm or hot water because it will cook the eggs. Whip the eggs and water mixture. Add all other ingredients. Mix.

Place into steamer. We don't have a steamer so we add water into a pot and raised the dish using a metal stand. Once the water has boiled, turn the heat to low and steam for 5-10 minutes with the lid on. If you like your eggs smooth/just cooked 5 minutes is enough. I like it rough and well cooked so I cook it more than 5 minutes.

You may add other ingredients like shrimp, mushrooms, meat, etc. It depends on what you like. Whenever we add items we use 1 egg. Add the item in the mixture before steaming.
