Braised Tofu

Braising (from the French “braiser”), is a combination cooking method using both moist and dry heat; typically the food is first seared at a high temperature and then finished in a covered pot with a variable amount of liquid, resulting in a particular flavor. Wikipedia

Serves 4

Ingredients:
- 2 14 oz packs of medium-firm tofu
- 3/4 C soy sauce (low sodium)
- 1/4 C light brown sugar
- 4 cloves garlic, minced
- 1 tsp sesame oil
- 1 chili pepper, thinly sliced (optional)
- 1 Tbs honey
- oil to coat the pan

Special Notes
:
- If using regular soy sauce add more sugar or honey to balance out the saltiness.
- Ground turkey or beef can be added to this dish to spice it up. Just cook the meat, set aside, and add along with the marinade.

Directions:
- Remove tofu from containers and set on a strainer
- Mix the soy sauce, brown sugar, sesame oi, pepper, and honey in a medium to large bowl. Add garlic.
- Coat pan on medium-high heat. Pat tofu dry with towel. Cut tofu to desired size. I cut each container of tofu into 12 pieces.
- Place tofu in a single- non crowded layer onto the pan.
- Cook tofu for 5-6 minutes or until slightly brown. Carefully flip tofu to other side, let sit for 6-10minutes or until slightly brown. Turn down heat to medium and add marinade. Let sit for 5 minutes and turn tofu over for another 5 minutes.
- Serve tofu with rice as either a side dish or main course. You may garnish with chives or green onions.
