Taiwanese Cucumber Salad

I went to visit my boyfriend in South Bay. We eat out a lot so we decided cook lunch at home. He is an amazing cook. We needed some greens to go with our meal so he made this.





First off peel the cucumber. It is best if you have a peeler. Makes life easier. About 1 cucumber per person. Then you cut the cucumber in half and remove all the guts.


Chop into cubes and place in a big bowl. Slice about 2 garlic per cucumber and toss into the bowl. Pour in sesame oil, soy sauce, and chili garlic sauce. It is okay if you have a pool of liquid on the bottom. Add the chili garlic sauce depending on how much spicy you can take. We added a little and it added to the flavor but wasn't spicy. Toss the cucumber cubes so they all get drenched in the sauce. Let the cubes sit for 30 minutes while frequently mixing the cubes. Remove the garlic slices and enjoy. Perfect for a hot day!



Ingredients:
- cucumber (1 per person)
- soy sauce
- sesame oil
- garlic chili sauce
- Garlic (2 per person)
- sugar (1 teaspoon per person)
