Yangzhou Fried Rice


Per Wikipedia: “Yeung Chow Fried Rice”, or Yangzhou Chao Fan (also spelt as “Yung Chow”), is a popular Chinese-style wok fried rice dish in many Chinese restaurants in China, the Americas, Australia, United Kingdom, and the Philippines.



Serves: 2-3

Prep Time: 10 minutes

Cook Time: 15 minutes

Ingredients:
2 cups cold cooked rice
3 tablespoons of oil
1 lb of shrimp, peeled and de-veined
1-2 cloves of garlic, minced
1-2 stalks of green onions, chopped
2 eggs lightly beaten
1/3 cup of frozen peas, thawed and drained
2 tablespoons of soy sauce
salt/garlic salt to taste

Directions:
In an oiled pan on medium-heat heat cook shrimp. ~3-4 minutes. Dish out
In the same pan, adding the rest of the oil and fry garlic to medium brown.
Add rice and mix frequently.
Add beaten egg to the rice. Stir around making sure all the rice is coated with egg.
Add peas, shrimp, and green onions.
Add soy sauce, salt, and seasonings. Stir making sure everything is warmed up.
Serve hot
