Pad See Ew

I love shrimp but you can make this with whatever protein you like: chicken, pork, beef, or tofu.

Serves
: 2

Prep Time: 15 minutes

Cook Time: 15 minutes

Ingredients:
- 1lb Flat Fresh Rice Noodles, separate the noodles
- 1lb Chinese Broccoli, Gai Lan
- 1 Egg
- 2 cloves of garlic, minced
- 1 lb of shrimp, peeled & de-veined
- oil

Sauce
- 1 tablespoon oyster sauce
- 1 tablespoon of brown sugar
- 2 tablespoon of soy sauce

Directions
:
- Boil the Gai Lan for 3-4 minutes and take out.
- In a pan, cook the shrimp till pink and tender, about 4 minutes. Take out.
- In the same pan, add garlic and gai lan.
- Add the noodles.
- Stir noodles for about a minute and add the sauce (mixture of oyster sauce, brown sugar, and soy sauce)
- Once the sauce is evenly spread over the noodles, make a "hole" in the middle of the noodles.
- Crack egg in the "hole."
- Let the egg cook for a bit but do not let it cook fully.
- Stir egg until it coats the noodles.
- Add shrimp back.
- Cook until egg is done.
- Serve while hot.
