Asparagus Mimosa

Hi! I am back! It has been a while but I am now officially done with my second year of medical school!
Serves: 4

Prep Time: 5 minutes

Cook Time: 15 minutes

Ingredients:
- 4 eggs
- 2 bunches of medium sized asparagus
- 2btsp, extra virgin olive oil
- 2tsp capers, drained
- 1tsp, sea salt
- black pepper to taste

Directions:
Boil a pot of water, toss eggs in, and simmer for 10 minutes. Toss eggs into an ice bath. Remove shells and grate on a coarse cheese grater.

Remove wood ends of asparagus and cook in the same pot as the eggs or in a different pot.

Drizzle olive oil onto the asparagus. Place eggs, capers, sea salt, and black pepper to taste on top. Enjoy!

  1. woot! haha, i definitely thought of a drink when i saw mimosa :P do capers come canned, only know them from chicken piccata but unfortunately most restaurants make it too sour and oily...
