Scrambled Egg & Tomato

Improvised Cooking at its best. This is more like home!




Serves: 2

Prep Time: 5 mins

Cook Time: 10 minutes

Ingredients:
2 tomato
4 eggs - beated
salt
oil
Green onions - chopped (optional)

Directions:
Wash and cut the tomato into fourths or smaller. Oil a pan on medium heat and toss the tomatoes into the pan. Let them sit while stirring occasionally for 5 minutes. You may have lid on. After a bit the tomatoes should lose its shape. Add your spices to the beaten eggs. I used garlic salt but you may use salt or/and pepper. Pour over the tomatoes. Scramble the eggs with the tomatoes. This way the eggs are more wet and mixed in with the tomatoes. Add green onions.

You can use a different portion of tomato to egg. Depends on your preference.
