Cold Sesame Noodles
Serves: 4-6
Prep Time: 5 minutes
Cook Time: 5 minutes
Post- Cook Time: Overnight
Ingredients:
1 pound soba noodles (any noodles will work)
1/4 cup sesame oil
1/4 cup black soy sauce (dark, if using light use 1/8 cup)
1 1/2 tablespoons balsamic vinegar
1 1/2 tablespoon sugar
1 tablespoon hot pepper oil, optional
1/4 cup green onions, finely sliced
2 tomatoes, diced
2 cups of peas, blanched
(this was what I had in the fridge. You may add whatever you want from meat to other veggies)
Directions:
1. In a large pot of boiling water, cook pasta until al dente, according to package instructions. Drain, rinse with cold water, and transfer to a large bowl.
2. Combine sesame oil, soy sauce, sugar, vinegar and green onions in a medium bowl.
3. Stir and mix in the sauce to the noodles. Make sure all the noodles are well covered. Add garnishes.
4. Chill overnight.
