Spicing up a classic with bacon and broccoli.
Serves: 2-3
Prep Time: 10 minutes
Cooking Time: 20 minutes
Ingredients:
8 ounces elbow noodles (2 cups)
1 1/2 cups low-fat milk, divided
3-4 slices of bacon, chopped
1 head of broccoli, cut into small bite sized florets
3 tablespoons flour
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon ground white pepper
3/4 cup shredded extra-sharp Cheddar cheese
1/4 cup shredded Parmesan cheese
Directions:
1. Bring medium-large pot of water to a boil. Cook pasta about 5 minutes. Add broccoli and cook for another 3 minutes. Drain.
2. Cook bacon.
3. Heat 1 cup of milk in another large pot on medium-high heat until just simmering. In a large bowl, pour in the rest of the milk. Add flour, garlic powder, salt, and pepper. Mix well. Add flour mixture to in milk. Return to simmer and constantly whisking until the mixture thickens, about 2 to 3 minutes. Remove from heat and add shredded cheeses until cheeses melt.
4. Add the pasta and broccoli into the cheese and stir until all pasta is covered with cheese. Add bacon. Add salt and pepper to taste.

Do you ever cook anything with tofu? Have you seen any interesting recipes for tofu? I've been a "little bit vegitarian" for over a month now (I just eat meat a little bit but like not every day), but I feel like I need to find new foods. I bought a block of tofu and am not sure how to cook it.
