Snicker Doodles

I didn't discover Snicker Doodles until my sophomore year in college when my roommate exposed me to them. They are pretty much sugar cookies with a sugar and cinnamon coating.




Makes 2-4 dozens

Ingredients:

Snicker doodles
- 2 3/4 cups all purpose flour
- 1/2 teaspoon salt
- 1 1/2 cups (300 grams) granulated white sugar
- 2 teaspoon baking powder
- 1 cup unsalted butter
- 2 large eggs
- 1 teaspoon pure vanilla

Coating
- 1/3 cup brown sugar
- 2 teaspoon cinnamon


Snicker Doodles

In a large bowl mix flour, salt, and baking powder.
In a the bowl of your mixer or in a very larger bowl if you are using an electric hand mixer, beat butter and sugar. Add eggs, one at a time, beating until mixture is smooth. Beat in vanilla.
Beat in the flour mixture.
If the dough is soft, cover and refrigerate for 2 hours.

Preheat oven to 400F

Shape the dough into 1 inch balls.

Coating
In a shallow large bowl mix together the sugar and cinnamon. Roll the balls of dough in this bowl so that all the surface is cover with the sugar mixture. Place on a baking sheet with parchment paper about 5cm apart. Flatten the dough balls into 1/2 inches.

Bake for 8-10 minutes or until golden brown or the edges are firm and the inside is soft. Move to cooling rack. Enjoy or store in an airtight container. Can last 10-14 days in airtight container.
