Potato Salad
Serves 5-7
Ingredients:
- 4 medium or 2 large potatoes
- 5 eggs, boiled
- 5 individual stalks celery, chopped
- 2 stalks green onion, chopped
- 1 1/2 cup mayo
- 1/4 Dijon mustard
- salt and pepper to taste
- paprika (optional)
Wash, peel, and chop the potatoes into small bite size pieces. Cook the potatoes. You can steam them which takes about 20 minutes or bake them.
Cut the celery stalk length wise into fourths. Chop into small pieces.
Mash the eggs up and toss everything into a large bowl. Mix everything together until everything is coated with mayo. Add salt and pepper to taste.
Sprinkle paprika upon serving (optional)

Looks good! I wanted to try to make potato salad with red potatoes because i tried it somewhere and it was yummy. I never did make it though.
