Bacon & Egg Tea Sandwiches
Makes: 6 Sandwiches or 12 tea sandwiches
Ingredients:
- 6 large hard-boiled eggs
- 1 stalk of green onion, finely chopped
- 4-5 tablespoons of mayo
- 6-8 crispy cooked bacon, chopped
- salt and pepper to taste
- 12 pieces of bread
Boil eggs. Once the water boils turn heat to low for 10 minutes. Remove from heat. Wash with cold water. This will prevent the shell from sticking to the egg white therefore assisting in peeling.
Smash the eggs in a bowl with a fork. Add mayo, green onions, bacon, salt, and pepper.
Trim crusts of the bread. Spread the egg filling over the bread and top with another bread. Cut in half if you want tea sandwiches.
