Mochi Pancakes

My husband had mochi waffles in Hawaii and really loved it. Now, instead of regular pancakes we make mochi pancakes. 

Yield: 8 pancakes
Prep time: 5 minutes

Cook time: 10 minutes

Ingredients:

1 cup sweet rice flour

2 teaspoons sugar (can use 1 teaspoon for less sweet)

2 teaspoons baking powder

Sprinkle of salt

½ teaspoon vanilla extract

1 egg

1 cup milk

1 teaspoon oil


Directions:

Mix all of the ingredients together in a bowl

Preheat pan, set temperature to medium

Once pan is hot, coat with a little oil or cooking spray

Use approximately ¼ cup of batter for each pancake.

Cook until pancake is no longer runny. Flip once and finish cooking.

Tips & Thoughts
Can add chocolate chips (1/4 cup)
Top with powdered sugar or syrup
