Red Velvet Cookies

In light of Valentines Day I made red velvet cookies. They look so pretty and taste so good! 

Makes: 20-25 cookies

Prep Time: 1.5 hours (1 hour chilling)

Bake Time: 10-11 minutes

Ingredients:

1 and 1/2 cups + 1 Tablespoon (198g) all-purpose flour (careful not to overmeasure)
1/4 cup (32g) unsweetened cocoa powder (I cheated and used hot chocolate- turned out great)
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup (115g) unsalted butter, softened to room temperature
3/4 cup (150g) light brown sugar (or dark brown)
1/4 cup (50g) granulated sugar
1 egg, at room temperature*
1 Tablespoon (15ml) milk
2 teaspoons vanilla extract
2.5 teaspoons red food coloring (liquid or gel)
1 cup (180g) semi-sweet chocolate chips (plus a few extra for after baking)

Directions:
1. In a bowl, mix up your dry ingredients: cocoa powder, baking soda, flour, and salt. Set aside.
2. Cream together the butter in another bowl using mixer.
3. Beat in egg, milk, and vanilla extract.
4. Beat in brown sugar and granulated sugar.
5. Slowly mix in the dry ingredients. Beat in red food coloring.
6. Beat in more food coloring if you want dough to be redder.
7. Mix in chocolate chips
8. Cover and place in refrigerator for an hour to harden the dough.
9. Preheat oven to 350F.
10. Roll dough into 1.5 tablespoon balls and place on baking sheet.
11. Bake for 10-11 minutes
12. Stick a couple chocolate chips on top. This is give them those pretty little creases.
13. Cool for 10 minutes.
14. Enjoy!
