Garlic Parmesan Edamame
Serves: 4
Prep Time: 5 minutes
Cook Time: 15 minutes
Ingredients:
1 (16 oz) pkg frozen edamame in shell
1/2 c extra-virgin olive oil
4 cloves garlic, minced
1/2 c Panko Bread Crumbs
1/2 c freshly grated Parmesan cheese or shaker's Parmesan
salt to taste
Directions:
Blanch the edamame. Drain and set aside.
Combine olive oil and garlic. Better if you have a food processor.
Toss the edamame into a pan on medium high heat
Add olive oil/garlic mixture.
Saute for a couple minutes.
Add Panko Bread Crumbs, Parmesan, and salt.
Toss until well coated.
Enjoy!
