Hello! I am back after a long hiatus! I graduated from medical school and moved back to California where I started my intern year. It has been crazy hectic and I have mainly stopped cooking. I know its sad. I recently found myself with more time on my hands so I had some people over for dinner. I had this really delicious quiche at work and found out its super easy to make. My dinner guests really enjoyed it and I plan to continue to bake Quiches!
Serves: 4-5
Prep Time: 20 Minutes
Cook Time: 40 Minutes
Ingredients:
- 1/2 cup of butter
- 3 cloves of garlic, minced
- 1 small onion, chopped
- 6 oz packaged frozen spinach, thawed and drained
- 6 oz feta cheese, crumbled - I used regular but you can use herb and garlic
- 8 oz cheddar cheese, shredded
- salt and pepper to taste
- 9 inch unbaked deep dish pie crust
- 2 eggs beaten
- 1 cup of milk
Directions:
1. Preheat oven to 375 degrees F (190 degrees C)
2. In a medium skillet, melt butter over medium heat. Saute garlic and onion in butter until lightly browned, about 7 minutes. Stir in spinach, feta and 1/2 cup Cheddar cheese. Season with salt and pepper. Spoon mixture into pie crust.
3. In a medium bowl, whisk together eggs and milk. Season with salt and pepper. Pour into the pastry shell, allowing egg mixture to thoroughly combine with spinach mixture.
4. Bake in preheated oven for 15 minutes. Sprinkle top with remaining Cheddar cheese, and bake an additional 35 to 40 minutes, until set in center. Allow to stand 10 minutes before serving.
