Similar to the Taiwanese Cucumber Salad but simpler! Best for those who don't like spicy.
Serves: 2-3
Prep Time: 5 minutes
Cook Time: 5 minutes
Ingredients:
- 2 small cucumbers or 1 large cucumber- skinned
- 3 cloves of garlic, crushed and minced
- 1 tablespoon of Chinkiang vinegar (I have no idea what kind of vinegar this is so I just used rice vinegar.)
- 1 tablespoon of light soy sauce
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/2 teaspoon of sesame oil
Directions:
- Using a mallet smash the cucumber (I don't think this step is necessary but if you like smash things go on ahead)
- Cut cucumber into bite sized pieces lengthwise- place in a dish
- In a bowl, mix the garlic, vinegar, light soy sauce, sugar, salt, and sesame oil.
- When ready to serve pour the sauce onto the cucumber bites (the juice from the cucumber will dilute the sauce if you let the cucumber sit in the sauce for a while)
