Ahh! I love shrimp! More Hawaii inspired food!
Serves: 2-3
Prep Time: 35 minutes
Cook Time: 10 minutes
Ingredients:
1 1/4 pounds White Shrimp, deveined
4 tablespoons extra virgin olive oil )
4 tablespoons butter, salted
3 heads fresh garlic
2 lemons
1/2 teaspoon course Hawaiian sea salt (regular sea salt works too)
1/2 teaspoon fresh cracked pepper
1/8 teaspoon smoked paprika
1/4 cup white wine (try to avoid really dry wines for this recipe)
Directions:
Roasted Garlic:
1) Peel the outer layer of skin off the garlic bulb leaving a single layer covering each garlic clove.
2) Using a knife cut off 1/4 to 1/2 inch of the tops of the cloves, exposing the tops of the cloves.
3) Drizzle olive oil on top of each clove.
4) Sprinkle black pepper & salt onto the cloves
5) Wrap up in aluminum foil
6) Place in a 400F oven for 40 minutes.
7) Take out and let cool
8) You can squeeze the garlic out or peel the skins individually to free the garlic.
Shrimp:
1) Mince remaining garlic
2) Heat large skillet with olive oil and butter.
3) Saute the garlic low and slow until soft and carmelized
4) Add pepper, roasted garlic, salt, paprika, wine, and juice of one lemon.
5) Continue to cook on low-med until the sauce forms
6) Add shrimp in a single layer and turn the heat up to med.
7) Cook for 3-5 minutes then flip the shrimp.
8) Cook for another 2-3 minutes
9) Turn off heat.
10) Enjoy over rice.
