Mini HasselBack Potatoes
Isn't this so cute?!
Serves: 1/person
Prep Time: 3 minutes
Cook Time: 25-30 minutes
Ingredients:
Yukon Potatoes
Garlic, sliced thin
Butter
Olive oil
Salt
Pepper
Directions:
Preheat oven to 400F
Place the potatoes with the flat side down
Cut almost all the way through by 3mm-4mm intervals
Slip the garlic between the slits
Spread some butter on top
Drizzle olive oil
Sprinkle salt and pepper
Toss into oven for 25-30 minutes or until the outside is slightly crispy and the inside flesh is soft
