Wow. It has been a while since I have last posted! My husband and I are expecting our baby in the next couple days! Since I have been at home on maternity leave we have to make lunch for the both of us. This is one of the items we've made. We love that we can make it in bulk for multiple meals.

Total Time: 20 minutes
Ingredients:
PASTA SALAD
- 12 oz. medium shells or other small pasta of choice
- 2 cups frozen petite peas thawed
- 8 oz. thick cut bacon cooked and chopped
- bundle of baby broccoli
LEMON PARMESAN DRESSING
- 2/3 cup mayonnaise
- 1/3 cup olive oil
- 1/4 cup freshly finely grated Parmesan cheese
- 2 tablespoons lemon juice
- 1/2 tablespoon freshly grated lemon zest
- 1 tablespoon white vinegar
- 1 tablespoon Dijon mustard
- 1 teaspoon dried basil, dried chives
- 1/2 tsp EACH onion powder, garlic powder, salt, pepper, sugar
Directions:
- Cook pasta per directions, drain, and let cool
- Add a bit of olive to prevent sticking
- Blanch peas and baby broccoli - cut baby broccoli into pieces
- Mix ingredients for dressing
- Mix dressing with pasta
- Enjoy
Tips & Thoughts:
- Original recipe only used peas and bacon - we added the baby broccoli
