My husband is out of town. He is usually the cook so I had to fend for myself. It has been a while since I have tried a new recipe. I borrowed Chrissy Teigen's Cravings Hungry for More from the public library. I love shrimp! This recipe reminds me of orange chicken.

Ingredients:
2 medium oranges
3 tablespoons honey
2 tablespoons soy sauce
1 tablespoon unseasoned rice vinegar
1 tablespoon cornstarch
1 pound large (16-20 count) shrimp, peeled and deveined
Kosher salt and pepper
3 tablespoons canola oil
6 cloves of garlic, minced
1 tablespoon finely minced fresh giner
2 scallions, whites thinly slices, greens cut into 2-inch length
1 teaspoon red pepper flakes
Cooked rice, for serving
Directions:
- Using vegetable peel, pull off a 1-inch wide strip of zest from 1 orange
- Finely grate zest from half of the orange
- Juice oranges (~1/2 cup) into a medium bowl
- Whisk in honey, soy sauce, and vinegar
- In a small bowl, combine cornstarch with 1 tablespoon of the orange-soy mixture to form a paste , the stir back into bowl of rest of the orange-soy mixture
- Pat shrimp dry with paper towel
- Season both sides generously with salt and pepper
- Heat 1 1/2 tablespoon of oil over medium high heat in skillet
- Add shimp and cook one side for 1-1.5 minutes and then flip and cook 1 minute more. should be bright pink. Transfer shrimp to plate
- Add remaining oil
- Toss in garlic, shrimp, scallion whites, and red pepper flakes
- Cook until fragrant, 30 seconds to 1 minute
- Add orange-soy liquid and strip of orange zest and cook, stirring until thicken, 1-2 minutes
- Return shrimp to skillet with scallion greens - Toss to coat with sauce
- Serve over rice - add pinches of the grated orange zest
Thoughts & Tips:
- Definitely not authentic Asian food. More like Americanized Asian food. A bit saucy.
- Feels like a healthier version of the popular orange chicken
- A bit on the sweet side but goes well with rice
- I used one large orange and it worked well
- Probably can get away without using any orange zest if you want to skip that step
- I didn't use the red pepper flakes as I don't do spicy
