For Christmas this year, I asked for a KitchenAid! And I got one! Yay! We are starting to bake more. I generally bake cookies but decided to try bread as its a little less fatty. Here is a simple banana bread recipe. Enjoy and Merry Christmas!
Yield: 1 loaf of bread
Prep Time: 15 minutes
Bake Time: 60 minutes
Ingredients:
3/4 cup coarsely chopped walnuts (3 ounces)
1 and 1/4 cup flour
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon salt
1 cup sugar
2 large eggs
1/2 canola oil
3 medium over ripe bananas- mashed (1 1/4 cup)
1 teaspoon vanilla extract
Directions:
1) heat oven to 350 degrees
2) coat baking pan with cooking spray or line with oil
3) in a medium bowl, mix flour, baking soda, cinnamon, and salt
4) in the bigger bowl, combine eggs, sugar, oil and mix on high speed until light and creamy
5) mix in dry ingredients
6) mix in the bananas and the vanilla extract - beat until smooth
7) fold in walnuts
8) pour mixture into pan (8x4 or 9x4)
9) bake on medium rake for 50 to 60 minutes
10) let cool for 10 minutes

Tips: my pan is a bit smaller than what the recipe called for so the top got a bit fat and dug into the top rack. Would prob remove the top rack next time.
