Garlic Parmesan Roasted Chickpeas


My friend ordered a chickpea appetizer at dinner one night. It was soo delicious! I love healthy but tasty snacks! Chickpeas are an excellent source of fiber!
Serves: 2 - 4

Prep Time: 10 minutes

Cook Time: 45-50 minutes

Ingredients:

30 oz. chickpeas (aka garbanzo beans)
drained and rinsed
1 tbsp olive oil
1 tsp minced garlic
1/2 tsp sea salt
Fresh ground black pepper, to taste
1/2 cup grated Parmesan cheese

Directions:
- If the chickpeas are from a can, place on a paper towel to dry for about 30 minutes
- Preheat oven to 400F
- In a medium bowl, combine olive oil, garlic, sea salt, black pepper, and Parmesan cheese.
- Add chick peas. Mix to coat all the chick peas.
- Spread on a baking sheet and bake for 45-50 minutes or until golden and crispy.

Tips: For those on a budget, I used shakers Parmesan cheese and it tasted great.
