Came upon this recipe while on foodgawker. Simple and easy.
Serves: 4
Prep Time: 10 minutes
Cook Time: 20 minutes
Ingredients:
10 oz. dried pasta of your choice (I used thin spaghetti)
olive oil
8 oz. shrimp, peeled, deveined, and thoroughly pat dry
2 cloves garlic, minced
half an onion, miniced
8 oz. shiitake mushrooms (about 10-12), thinly sliced
1/3 cup white wine
3 tablespoons soy sauce
3 tablespoons butter
1/4 cup chopped parsley
1/3 cup grated Parmesan cheese
Salt and pepper
Tips for those on a budget: Instead of using fresh parsley, I used dried. I also used shakers Parmesan cheese. The meal will taste better if fresh ingredients are used but I am sure I saved a couple of bucks.
Directions:
1. Cook your pasta per the instructions. Set aside.
2. While you are cooking your pasta, set pan with olive oil to high heat.
3. Toss in shrimp and cook till opaque. 1 minute is more than enough. Shrimp continues to cook even when its off the heat. Set aside.
4. Toss in onion and garlic. Saute until caramelize. Roughly 2 minutes.
5. Add in shiitake mushrooms. Saute until caramelize. Roughly 6 minutes. If pan is dry, add more olive oil.
6. Deglaze mushroom with white wine. Cook until all the white wine has evaporated.
7. Add in pasta, soy sauce, and butter. Toss around until butter has melted.
8. Add in shrimp, parsley, and Parmesan cheese.
9. Add salt and pepper to taste.
10. Enjoy!
