Honey Walnut Shrimp

My favorite Chinese dish!
Serves: 4-6

Prep Time: 10 minutes

Cook Time: 20 minutes

Ingredients:

1lb of shrimp 31-40 count of shrimp
1/2 cup walnuts
3 tablespoon of mayonnaise
1/2 tablespoon of condensed milk
1/2 tablespoon of honey
1 teaspoon of lemon juice
1 egg white
1/2 cup corn starch 
oil for frying

For the walnuts:
1/2 cup water
1/2 cup sugar

Directions:

1. Peel and de-vein shrimp. Pat dry. Add in egg white. Mix well and set aside.
2. Rinse walnuts and pat dry. Set aside
3. In a small pot, bowl water and add sugar.
4. Stir the water/sugar mixture until it turns thick and yellow.
5. Add in the walnuts and remove the pot from the heat. Once it turns yellow it can quickly turn burnt and bitter!
6. Drain the walnuts and place on parchment paper to dry. Don't place on paper. Will stick!
7. Heat oil in a wok/pan in high heat.
8. Coat shrimp with starch and fry in the hot oil until golden brown. Remove from wok/pan and place on paper towels to drain excess oil (depending on how health conscious you are, you can fry it for a shorter amount of time)
9. In a bowl, mix together the mayonnaise, honey, condensed milk, and lemon juice. (You can just use honey unless you love condense milk and will use up and entire can of it)
10. Mix the shrimp with the sauce.
11. Transfer shrimp and walnuts onto a plate. ENJOY!
