Seafood pasta with tomato sauce
Serves: 4-5
Prep Time: 20 minutes
Cook Time: 20 minutes
Ingredients:
- 1 can of tomato paste 12 oz/340g
- 1 can of fire roasted diced tomatoes 14.5 oz/ 411g
- 1 can whole clams (if possible use fresh clams)
- 2 tbs sugar
- 1/2 cup clam juice
- 1 green bell pepper, chopped
- 1 large yellow onion, chopped
- 5 cloves of garlic, minced
- 2 cups of mushrooms, sliced
- 1/2 lb shrimp
- basil to taste
- oregano to taste
- ground black pepper to taste
- 1 box of linguini
Directions:
In a pan, stir fry the onions, bell peppers, shrimp, clams, garlic, and mushrooms.
Heat the tomato paste, diced tomatoes, and clam juice to a simmer. Add sugar and mix well. Add basil, oregano, and black pepper to taste.
Cook the linguini al dente. You may add sea salt and your spices to the boiling water for extra flavor.
Drain the linguini while saving a bit of the water. Add the water into the sauce. The starch in the water allows the sauce to stick to the linguini better. Add the sauce with stir fried items over linguini.
